We're finally headed back to school this week, so dinner will be all about quick, filling, easy comfort food that everyone is willing to eat.
- Monday: Leftovers (Lemon Chicken, Carrot Orzo, Whole Wheat Couscous with Zucchini and Cherry Tomatoes, Broccoli Salad, rolls)
- Tuesday: Creamy Enchilada Casserole with steamed asparagus and corn on the cob
- Wednesday: Burgers on the grill with Salt and Pepper Potatoes and steamed broccoli
- Thursday: Marinated Pork Tenderloin (need to pick a recipe) cole slaw, leftover potatoes
- Friday: Spaghetti and Turkey Meatballs with steamed green beans and rolls
- Saturday: Grilled Cheese and Minestrone soup
- Sunday: Leftovers
- Monday: Molasses Glazed Chicken Thighs, brown rice pilaf, steamed broccoli

I'll also bake a potato-kale frittata and a Peach Berry Crisp to keep up with the fresh produce that I have around here, and eat them for breakfasts or lunches.

I love comfort food! I'm so excited to start cooking heartier meals, now that the weather is finally cooling down. In fact, this week, I posted a recipe for one of my cool-weather favorites: Lentil Stew with Buttered Noodles. Thanks for sharing so many great recipes!
