- Monday: Baked Ziti with Crispy Eggplant Meatballs and salad--I will share this recipe for the eggplant meatballs if it's a good one! (Extra sauce and meatballs will be saved for a future ziti, so all I will need to do is cook pasta, assemble, and bake.)
- Tuesday: Potato Kale Frittata with fresh fruit, salad, and rolls
- Wednesday: (Parents out) Salt and Pepper Chicken, steamed broccoli, and roasted baby red potatoes
- Thursday: (Parents out) Creamy Enchilada Casserole with steamed green beans
- Friday: Leftovers, steamed vegetables
- Saturday: Black-Eyed Pea Hambone Soup with Skillet Cornbread and Salad
- Sunday: Molasses Glazed Chicken Thighs (triple recipe, freeze 2 portions), Carrot Orzo, steamed asparagus
- Monday: Favorite Pot Roast over egg noodles with steamed carrots and broccoli
