- Monday: Leftovers
- Tuesday: Lentil Rice Casserole (sliding from last week)
- Wednesday: Lamb Kabobs (from Farmer's Market) and Eggplant Stew over Couscous (this is great stuff and not too difficult to make!)
- Thursday: Marinated Salmon (from freezer) with Lime Cilantro Soba noodles and steamed broccoli
- Friday: Salt & Pepper Chicken, Mixed Roasted Potatoes, steamed green beans (from Farmer's Market--fabulous w/butter and lemon juice!)
- Saturday: Parties all day long. (Make salad for one party.)
- Sunday: Dad's Choice for Father's Day
- Monday: Leftovers (if there are any. If not, ummm...)
I also have a bunch of basil waiting to be made into pesto, and I hope to make it to the farmer's market again this Thursday.
