Last night's dinner (kid portions): Salt and Pepper Chicken, Roasted Purple Potatoes, Steamed Broccoli
Things didn't work out exactly as planned last week due to me being sick for a couple days on top of the heater dying... the good news is that when you plan your meals around what's in your freezer, things don't go to waste when you don't get around to cooking them. :)
- Monday: (the kids already ate the spaghetti I planned on serving) Mom's Chili made with ground turkey, homemade cornbread, and salad
- Tuesday: Chicken Casserole, fresh pears
- Wednesday: Minestrone (from the freezer) and Grilled Cheese
- Thursday: Visiting Grandparents'
- Friday: Visiting siblings/cousin
- Saturday: Creamy Enchilada Casserole with steamed broccoli (hopefully this will be made and frozen in advance...)
- Sunday: Apple Sausage Risotto (it's a good thing the sausage has been frozen as this has slid now for three weeks!) and salad
- Monday: New Recipe: Crunchy Crumbled Cod with Frozen Peas
